Who doesn’t love the irresistible flavor of Cheez-It crackers? Not I. However what I definitely don’t love is all the extra processed and unnecessary ingredients that go into each little perfect cheese square. You really only need four ingredients to make a better version. Feel free to swap out for any cheese you want or add some other flavors like rosemary or paprika.
1 1/2 cups grated cheddar cheese
3/4 cup All Purpose flour
4 Tablespoons unsalted butter, cold
1/8 teaspoon salt, plus more for sprinkling
Grate the cheese onto a clean surface. In a food processor, put the cheese, flour, butter salt in and pulse together until the dough comes together and pulls away from the sides. Form the dough into 2 balls and cover with plastic wrap. Place in the refrigerator for 30 minutes to chill. After the dough is full chilled, take out, preheat the oven to 400°F and line a baking sheet with parchment paper. Roll out the dough into a rectangle (to the best of your ability) and cut into small squares. Poke a hole in the center of each of the small squares. Sprinkle with coarse sea salt and bake for 15 minutes until puffed up and slightly brown. Crackers can be stored in a air tight container for up to 1 week.
