Dark Chocolate Protein Granola Bars


1 cup whole almonds, divided
1 cup walnuts, divided
1 1/2 cup old fashioned oats, divided
1/4 cup ground flax
2 TB chia seeds
1/2 cup coconut flakes
1/4 cup honey
1/4 cup coconut oil
1 tsp vanilla
1/2 tsp cinnamon
2 TB peanut or almond butter

Chocolate Glaze:

1 TB coconut oil
10 ounces dark chocolate


In a food processor, add 1/2 cup almond, 1/2 cup walnuts, and 3/4 cup of the oats. Process until it turns into a fine powder. Do not over process because it will start to stick together.
Chop remaining almond and walnuts and add them to a bowl with remaining 3/4 cup oats and processed powder. Add to this bowl the ground flax, chia seeds, and coconut flakes.
Heat a small pan on the stove and add honey, coconut oil, vanilla, cinnamon, and peanut/almond butter. Allow to foam and bubble for a minute, then pour immidiately over the nuts and oats mixture in the bowl and mix.
Preheat oven to 350 and line a pan with parchment paper enough to hang over the edges. Pour granola mixture into the pan and press hard to spread it out leaving no cracks. Bake for 10-15 minutes and remove allowing to cool.
To make the chocolate glaze: melt 1 TB coconut oil in a small saucepan. Add the chocolate and melt into a glaze. Pour over the bars. Sprinkle with additional nuts or cococnut flakes. Allow to set before eating.
