There’s not much explaining to do except that this is an easy peasy chocolate and peanut butter fudge recipe. I say this because it requires few ingredients, and zero oven skills. This is a really great recipe to make when you need something last minute for a dinner party, gathering, pot luck etc, and don’t have much time to bake.
The whole thing takes less then an hour and that’s just because you need time for it to set in the fridge. But the actually making takes close to no time at all. I did this one morning and was able to take a shower, eat breakfast and change during the whole thing.
7 oz. milk or semi sweet chocolate
1/2 Tablespoon milk
1 Tablespoon heavy cream
2 Tablespoons creamy unsalted peanut butter
5 Tablespoons powdered sugar
3 cups dark or semisweet chocolate chips
1 can sweetened condensed milk
1 teaspoon vanilla extract
1/4 cup mini chocolate chips
1/4 cup melted peanut butter
Line a bread loaf pan (not brownie tin, that will be too big), with parchment paper and set aside. In a microwave safe bowl, melt 7 oz. chocolate at 30 second increments until fully melted. Pour over parchment paper and place in fridge to harden, about 7-10 minutes. Meanwhile, in a bowl, stir milk, heavy cream, peanut butter and powdered sugar until fully combined and smooth. Spread evenly over chocolate and place back in the fridge to set for about 20 minutes.
In a medium saucepan over low eat or a double boiler, melt 3 cups chocolate chips and condensed milk. Stir often as you don’t want the chocolate to burn at the bottom. Once fully melted and chocolate is smoothly combined with milk, take off heat and stir in vanilla. Pour mixture over peanut butter. Top with mini chocolate chips and drizzle with melted peanut butter. Leave at room temperature to set for 2 hours then place in fridge to harden. Can be kept in fridge but take out to come to room temp before eating.
