An egg boat is literally what you would think it is. Eggs that are baked in bread to make it look like a boat. I’ve seen this made tons of times before and thought it would be really cool and impressive to make one day for breakfast. Obviously I wouldn’t make it for myself because that would be extremely aggressive and knowing me I’d eat the whole thing, so I waited until the perfect opportunity to create this baby…Christmas morning breakfast.
With only four people in my family, we could easily polish this thing off. It’s super easy and made with ingredients you most likely already have in your fridge. I love this recipe because it’s flexible with anything you like. You can add whatever kind of vegetables you want, make it different sizes etc. It’s perfect if you need a quick brunch idea or got some people coming over at the last minute. Highly suggested!
1 loaf ciabatta or Italian hero
5-6 large eggs
3/4 cup milk
1 cup baby spinach
Chopped veggies such as peppers, mushrooms, tomatoes
1/2 cup freshly grated cheddar cheese, plus more for sprinkling on top
salt and pepper to taste
Preheat oven to 375°F and line a baking sheet with parchment paper. Set aside. In a medium bowl, whisk eggs and milk. Stir in chopped veggies, spinach and cheese. Using a serrated knife, cut the middle out of the bread leaving about 2 inches on each end. Scoop out the bread and brush the inside with a little olive oil. Carefully pour egg mixture in the bread and spread out evenly. Top with more grated cheese. Bake for 35-40 minutes until eggs are set.
