Healthy Dairy-Free Pancakes

These pancakes are delicious and quick breakfast that will keep ya going all morning! It can easily be made gluten free as well, just swap out the flour for GF or add more spelt. This recipe makes about 3 medium sized pancakes and they are so yummy and just the perfect amount for one person.




1/2 cup plus 2 TB almond milk
1 TB apple cider vinegar
1/4 cup whole wheat flour
1/4 cup spelt flour
1 tsp baking powder
pinch salt
1 TB maple syrup or honey
1 tsp cinnamon


In a small bowl, combine the milk and vinegar and let sit for 5 minutes. In a separate bowl, combine all the dry ingredients. After 5 minutes, slow mix in the milk mixture to the dry ingredients and add the maple syrup/honey. Mix all together until fully combined. Heat up a pan or skillet and drop about a tablespoon of batter, letting cook and bubble before flipping. Top with fresh fruit, maple syrup or nut butter of your liking!
