Maple Glazed Pumpkin Donuts with Candied Pecans

Does this really need an introduction??? It tastes exactly how it sounds…amazing! And just in time for Fall because pumpkins are the king of Fall obviously. Make these, you won’t regret it. Also, I know a donut pan makes only 6 which is what this original recipe called for so feel free to cut it in half but I highly suggest leaving it as is…you will thank yourself later.

Ingredients: (makes 12 donuts)

For the donuts:

1 cup AP flour
1 cup whole wheat flour
1 teaspoon baking soda
2 teaspoons cinnamon
2 teaspoons ginger
1/2 teaspoon nutmeg
1/2 teaspoon cardamom
1 teaspoon fine salt
2 cups pumpkin puree
1 cup light brown sugar
2 large eggs room temperature
1/2 cup vegetable oil
2 teaspoons vanilla extract

For the glaze:

1 cup powdered sugar
2 teaspoons vanilla extract
2 Tablespoons maple syrup
3 Tablespoons milk

For the pecans:
1 cup chopped pecans
1 1/2 Tablespoons brown sugar
3-4 Tablespoons butter

 

Directions: 

Preheat the oven to 350° F and grease a donut pan, set aside. In a bowl, combine the flour, spices, baking soda and salt. Set aside. In a separate bowl, whisk together the pumpkin, sugar, eggs, vegetable oil and vanilla until all combined. Fold in the wet ingredients to the dry until all combined together. Spoon or pipe the batter into the pan and bake for 8-10 minutes until a toothpick inserted comes out clean.

While the donuts are baking, make the glaze. Combine all the ingredients besides the milk in a bowl and whisk. Add milk one Tablespoon at a time until consistency is thick and comes together, yet spreadable. Set aside.

To make the pecans, set a skillet over medium heat and melt butter and sugar together. Add pecans and stir so all the pecans are coated in the brown sugar and butter. “Cook” the pecans for 5-7 minutes until they are toasted and glazed, stirring occasionally so pecans don’t burn.

When the donuts are done, take out and let cool for 5 minutes. Dunk the donut in glaze coating the top completely and immediately scoop pecans on top. Enjoy!!
