Oatmeal Waffles


1 1/2 cups old fashioned oats
1 1/2 cups whole wheat flour
1 TB brown sugar
1 tsp cinnamon
1 1/2 tsp baking soda
2 eggs
3 TB melted coconut oil
1 1/2 cups almond or low fat milk


In a bowl, whisk together the oats, flour, sugar, cinnamon, and baking soda. In a separate bowl, whisk together the eggs, coconut oil and milk. Pour dry ingredients into wet and stir until combined. Cook in your heated and oiled waffle maker. Top with peanut butter or fresh fruit!
