Pumpkin Dark Chocolate Granola Bars

Ingredients:

3 cups rolled oats
1/4 cup quinoa
1 tsp pumpkin pie spice
1/2 cup brown sugar
1/2 cup honey
3/4 cup pumpkin puree
1 cup dark chocolate chunks or chips

Directions:

Preheat oven to 325 degrees. Spray and line an 8×8 inch bakng pan with non-stick cooking spray
In a large bowl combine the oats, quinoa, pumpkin pie spice. In a separate bowl, whisk together the sugar and honey. Add in pumpkin puree and combine until smooth. Add the pumpkin mixture to the oat mixture and stir until all the oats are coated. Place oats in baking dish and spread out evenly. Bake for 30-35 minutes until golden brown. Let the bars cool to room temperature before cutting into squares or bars.
