Pumpkin Waffle Grilled Cheese with Dark Chocolate

Something happened on total accident and I’m not even mad!! After buying a hefty supply of canned pumpkin because Fall, obviously, the only logical thing to do was make waffles. But, lately I’ve been seeing a lot of things being made in waffle makers it’s pretty unbelievable. People are using it to heat up their pizza, grill donuts, sandwiches, mozzarella sticks and all other crazy foods. Unfortunately I wasn’t that creative and didn’t have anything to really heat up or “waffle” so I stuck with the basics…grilled cheese.

This recipe for pumpkin waffles is pretty epic and super easy and of course delicious. Take it a step further like I did and make a waffle grilled cheese dessert sandwich. Pretty amazing and absolutely deliciously heavenly. Ugh.

Ingredients: (makes 4-5 waffles)

1 3/4 cup flour
1/4 cup sugar
1 Tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
4 Tablespoons melted butter (coconut oil  for vegan)
1 cup milk (almond milk for vegan)
3 eggs (flax eggs for vegan)

1-2 dark chocolate bars
6 oz Brie cheese

Directions: 

Preheat a waffle iron and grease it. In a bowl, stir flour, sugar, baking powder, cinnamon, nutmeg and cloves. In a separate bowl, mix butter, milk and eggs. Combine wet and dry ingredients and mix until combined. Cook waffles for 5-7 minutes until golden brown and fluffy. While waffles are cooking, prepare cheese by slicing it. About 3-4 pieces for each sandwich depending on your likes. Feel free to add more or less. Once waffles are done, let cool for a couple minutes. While waffles are slightly cooling heat a skillet on the stove on medium heat and melt a tablespoon of butter. Take one waffle square and place on skillet for about 1 minute to grill a little. Place 3-4 slices of brie on top of waffle, then place dark chocolate bar on top of cheese. Let heat and cook for 1 minute then place another waffle square on top. Let cook another minute then flip. Let that side cook for about 2 minutes. Press down as necessary. You will start to see the cheese and chocolate melt, then use a spatula to take out. Cut in half and serve right away. Enjoy the delicious and amazingness that is chocolate and cheese.
